Is there a way of getting the filename and the camera model, iso,
aperture and shutter speed to paste in a text file?

Ideally, I'd like to right click on File Properties, copy then paste
in my text file...  Same for Photographs Properties...

yes you can for metadata.

On the top of metadata viewer, you have button dedicated for these actions.
