When using Digikam to browse the collection and then entering "View Mode", the
photo can be zoomed by using the zoom widget in the bottom right - but
unfortunately there doesn't seem to be any intuitive keyboard shortcut for
zooming in and out.

I suggest a keyboard shortcut, the same as in Showfoto and in many other Linux
apps: zoom-in with the "+" key in the keypad, and zoom out with "-".
