Chroma Subsampling in JPEG output

What is the meaning of the option 'Chroma Subsampling' in the 'JPEG quality' settings? What should I set it to to ensure the highest quality JPEG output (file size is irrelevant for my purposes, I just want the highest quality JPEG files).

Use SHIFT+F1 over the settings to get contextual help. All is explained.

Btw, if file size is irrelevant, you should not use JPEG but a lossless format
